Pumpkin pecan cobbler makes a dessert your family will love. This cobbler makes a sauce on the bottom that is delicious. Serve it with whipped cream or some vanilla ice cream on top for a real treat. It keeps well for several days refrigerated and can be heated or eat it cold. It is wonderful with your morning coffee.
Pumpkin pecan cobbler will become one of your favorite pumpkin recipes.
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup white granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ginger
1 cup 100% pumpkin
1/4 cup oil (I used Canola)
1 teaspoon vanilla extract
1/4 cup evaporated milk (can use regular milk)
Whisk together the flour, sugar, baking powder, salt and spices. Stir in oil, pumpkin, vanilla extract and milk with a spoon. Spray a 7 1/2 x 11 baking dish with cooking spray and spread mixture into dish. Mixture will be thick. Make topping below and sprinkle over this mixture.
Topping:
1 cup brown sugar
1 teaspoon ground cinnamon
3/4 cup chopped pecans or walnuts
1 1/2 cup boiling water
Whisk together brown sugar and ground cinnamon and spread over pumpkin mixture. Sprinkle on nuts. Pour boiling water over all and do not mix.
Bake in preheated 350 degree oven for 40 to 45 minutes just until top is cooked. Bottom will be a sauce. Makes one cobbler or about 8 large servings.
Note: You could make this in a 9 x 13 baking dish but will not be as thick and may take about 10 minutes less time to cook. Enjoy!
